The Vegetables with Breakfast Challenge Starts Monday!

I notice a huge difference in my day when I eat vegetables with my breakfast. I had no idea how powerful vegetables were until I actually felt it in my body first thing in the morning. Plus, just eating a cup of vegetables in the morning, you can’t help but feel good about yourself. You start the day doing something lovely and nurturing for your body.

It’s actually pretty simple. For 10 days in a row we will add vegetables (sorry, potatoes don’t count) to whatever we are already having for breakfast. Maybe the thought of adding vegetables at breakfast makes you a little uncomfortable. Just start with something simple and build from there. Even if you just add steamed carrots to your breakfast every morning, it counts.

If you are already eating vegetables with breakfast regularly you can still do the challenge, just choose one of these next steps or one of your own and let me know in the comments:

  • Try 3 new vegetable recipes or 3 new cooking styles sometime during the 10 days.
  • Add a cooked whole grain along with your vegetable.
  • Eat breakfast before 8 am.
  • Sit down to eat breakfast without the newspaper or computer.
  • Eat only plants:  Grains, Vegetables, Beans, Nuts, Seeds
  • Eliminate any added sweeteners. This includes agave, maple syrup and brown rice syrup.
  • Support someone else to try vegetables with breakfast.

I am going to do the challenge with you. Spring is the time of year when the liver and gall bladder are in a state of renewal. With this in mind, my personal challenge is to have fresh cooked greens every single morning and pressed salad at least four times each week. In addition, I am going to go without baked flour for the whole 10 days. Our livers LOVE fresh greens and lighter foods.

For 10 days starting Monday, April 29, I will post my favorite recipes and tips. Plus, I will have a few giveaways for participants.

At the end of the 10 days, I would love to hear about your experiences. Was it hard to add vegetables at breakfast? What was your favorite vegetable or recipe?     Great idea. Easy way to get more veggies into your diet and start the day off right.

      I agree! Even when I go out for breakfast I try to ask for a side of steamed or sauteed veg. It just makes sense to try to get them in whenever I have a chance. 🙂

      Turnip roots and tops is one of my favorite recipes. It’s the perfect time of year to get those baby turnips with nice greens. I get them at the farmers market. Have fun!

      Yay! I am so glad you are inspired. I am excited to hear how it goes for you. A woman today told me she is feeling better just knowing her fridge is packed with vegetables.
